What exactly is Yaki Udon?

If you like noodles, you'll love this Yaki Udon Stir-Fry! This dish is created using Udon noodles, which are thick and have a silky smooth texture that makes them highly "slurpable," and it takes only 15 minutes to prepare.

So, what is Yaki Udon, exactly? Simply put, it's a Japanese stir-fried noodle dish made using udon noodles, a soy-based stir fry sauce, and veggies. Because "Yaki" means "Fry," this recipe is also known as Stir-Fried Udon Noodles. If you visit an Izakaya (Japanese tavern), you'll notice that Yaki Udon is frequently on the menu.

Meat (usually ground pig, shrimp, chicken, or beef) and vegetables such as cabbage, carrots, and pepper are included in some recipes. We're only using vegetables in this recipe because it's vegetarian. Bok choy (a cabbage relative) and shitake mushrooms are two of my favorite ingredients. However, you can use any vegetables that you enjoy.

Stir-fried Yaki Udon Noodles Ingredients

  • Udon noodles
  • Scallions
  • Garlic
  • Shitake mushrooms
  • Baby bok choy
  • Stir fry sauce

Yaki Udon: How to Make It (step by step instructions)

  1. Heat the vegetable oil in a large pan on medium-high heat then add the scallions and garlic and saute for 1 minute. Then add in the shitake mushrooms and bok choy
  2. Saute the shitake and bok choy for 3-4 minutes. The bok choy will shrink a lot once it’s cooked. Boil the udon noodles for one minute to separate them, drain them, then add the udon noodles to the pan.
  3. Add the stir-fry sauce to the pan and toss everything together until the noodles are evenly coated. Taste and adjust any seasoning if needed. Garnish with sesame seeds or chopped scallions. Serve immediately. (noodles are always best enjoyed fresh!
